Ummm… Yeah. This recipe is great. Most raw recipes I “have to have” are usually ones with oil and/or nuts and I’ve desperately been wanting one without…here it is! Definitely a new go-to recipe for me. Bonus: it’s super easy!
-2 red peppers
-1/4 C sun dried tomatoes, packed
-1/4 C fresh cilantro, packed
-2 large stalks celery
-3/4 C water
-1 tbsp lime juice
-1 tsp salt
-3/4 tsp cumin
-1/2 tsp chili powder
-1/4 tsp paprika
-1 clove garlic
-dash cayenne pepper (optional)
Blend all ingredients together. Depending on your blender, you may need to chop ingredients before blending. If you blend on high for a little bit the soup will get slightly warm or enjoy it as is because it’s delicious anyway.
Toppings: corn, avocado, cilantro, raw tortilla chips.
